Hospitality and Catering - Level 3
Richard attended King’s Lynn Academy before joining CWA and successfully completing a catering and hospitality course. After working in leading hotels and restaurants in London and France he returned to Norfolk and currenty works as the head chef at Briarfields Hotel, Titchwell.
“I have fond memories from my time at CWA, I liked the practical side where we were cooking in the kitchen or waiting in the restaurant. It covered all aspects of cooking from stocks to sauces, vegetables and garnish to pastry. Studying at CWA gave me a solid base to go into the industry and exercise the skills and knowledge that I learned. In my last year we had to do a six week work placement, I chose a hotel in London. I was offered a job at the end of my course at college which I took and never looked back.”
